Soft cheese made from cow's milk. Square-shaped with a hard rind formed by aging. Mildly aged, creamy, sweet and slightly acidic. Aromatic with a mild flavor and fruity aftertaste.
Its origins can be traced back to the 11th century in the small town of Taleggio, in the province of Bergamo in Lombardy. Indeed, it is one of the oldest soft cheeses. This cheese variety was made during autumn and winter, when cows were brought down from the alpine pastures to the villages. Traditionally, the tired cows were milked after the long journey; hence the name Stracchino, which derives from "stracche", or “tired" in Lombard dialect. This cheese is European PDO certified.
